Japanese izakaya macaroni salad is not the same as Western macaroni salad. It’s softer, richer, sweeter — Japanese mayonnaise is different, the macaroni is cooked further, there’s often ham, cucumber, sometimes corn. It’s a minor dish. Nobody orders it expecting it to be memorable.

But I always order it, at least the first time I visit a place.

日本の居酒屋のマカロニサラダは、欧米のものとは違う。やわらかく、リッチで、甘い——日本のマヨネーズは違うし、マカロニはよく茹でてある。ハム、きゅうり、時々コーン。脇役の料理だ。誰も印象に残るものを期待して頼まない。

でも私はいつも頼む、少なくとも初めて行く店では。

In one bite, I can tell whether it was made in the kitchen or came from a bag purchased at a food service supplier. The homemade version has variation — slightly different each time, because it depends on who made it and when, what ratio of mayo they used, how long it sat. The industrial version is consistent. Smooth. Slightly too sweet. The same every time, everywhere.

Consistency is not what I’m looking for in an izakaya.

一口でわかる。厨房で作ったものか、業務用食材業者から買った袋から来たものか。手作りのものにはばらつきがある——毎回少し違う、誰がいつ作ったか、マヨネーズの比率、どのくらい時間が経ったかによる。業務用のものは一貫している。なめらか。少し甘すぎる。どこでも毎回同じだ。

居酒屋に一貫性を求めていない。

The macaroni salad test works because it’s a low-stakes dish. No one is trying to impress you with the macaroni salad. It’s not on the menu because it’s a signature. It’s on the menu because it fills a role — something cold, something filling, something to keep you occupied between the main orders. The fact that some kitchens still make it by hand, for three hundred yen, tells you that the owner cares about things even when no one is watching.

マカロニサラダテストが機能するのは、それがリスクの低い料理だからだ。誰もマカロニサラダで印象づけようとしていない。看板料理だからメニューにあるのではない。役割を果たすためにある——冷たいもの、腹の足し、メインの注文の合間を埋めるもの。それでも手作りする厨房があること、300円で、は、誰も見ていないときでも店主が気にかけていることを教えてくれる。

The best macaroni salad I’ve ever had was in a six-seat place in Nagoya, my first year there. The cook — who was also the owner, the waiter, and the dishwasher — had made it that afternoon with too much pepper and the right amount of everything else. I ordered a second portion. He looked slightly surprised. I think nobody had ever ordered a second portion of macaroni salad before.

I went back for two years. The macaroni salad was always good.

今まで食べた中で一番うまいマカロニサラダは、名古屋1年目の6席の店にあった。コック——兼店主、ウェイター、皿洗いでもある——がその午後に作ったもので、コショウが少し多めで、他はちょうど良かった。2人前頼んだ。彼は少し驚いた顔をした。たぶん今まで誰もマカロニサラダを2人前頼んだことはなかったのだと思う。

2年間通い続けた。マカロニサラダはいつも良かった。
